Menu Plan Monday

I am so excited for next week: Spring Break! I'm going to sleep in, read, and test out new recipes. It's going to be awesome. I shared some good eats I had with you this weekend, but other than that, my kitchen was fairly quiet. Except on Friday night, when I made a delicious pizza.

My menu plan this week is a little shaky, as I planned according to what we have on hand, which is not much! I didn't go grocery shopping this week and am trying to stretch out what we've got for as long as I can. Our grocery budget is out of control this month. I can't believe how high grocery prices have soared in the last few months. It's insane. So I won't be going to the store until April (which is Friday, yayy!)

Bacon and Goat Cheese Chicken
Skillet Lasagna
Pan-Seared Salmon with Cranberry Quinoa
Apple Cinnamon Pork Tenderloin
Chicken Francese
Teriyaki Chicken Legs

Have you noticed a spike in your grocery bill? What changes have you made, if any, to keep costs low?

  1. I'm not sure if I've really noticed a spike in our bill, or if I'm just buying more stuff now that I'm blogging more often.

What I like to do to keep costs low(ish) is to head to the store after work and see if they have any chicken that's been marked down because that day is the sell-by date. I can usually get it 50% off, which is great. I just need to cook it or freeze it that night.

  2. Our grocery budget it out of control, too! I just thought it was me...never dawned on me to blame it on weird weather/produce prices. You are totally right, though!

  3. I know my grocery bills are out-of-control, but I've chosen to ignore it up until now. My son is participating in a research study which requires us to keep all our grocery receipts for a month. I'll be facing the music at the end of March!

  4. Not to much...but that is because I make a 2 week menu and shop for only those items! :)
