I've went ahead of myself and started jotting down ideas on Friday. The hubbs and I are trying to eat healthier! My hubby just finished his cardiologist sequence where he learned A LOT about healthy eating. His professors continuously stressed eating a Mediterranean diet; fruits, vegetables, fish, poultry, nuts, and whole grains. Hence the salmon recipe listed here today. When I was finally able to go to the store last week I bought carrots, grapes, strawberries, lettuce, and corn. Today we will be making a second trip to pick up some more ingredients for our new recipes, as well as a bottle of red wine and green tea leaves (very important aspect of the Mediterranean diet, having a glass of red wine with dinner every night).
I am also going to try to implement salmon into our weekly menu. Red meat will be taking a back seat, as it is not recommended to eat very often. I have NEVER made salmon, I'm a little nervous! I have no idea how to make it! I did some searching through my cooking magazines and blogs online. I found an awesome recipe on allrecipes.com, Alaska Salmon Bake. It sounds delicious and has great reviews. I'll let you know how it goes. :)
