What We Ate Wednesday- Sleep Deprivation Eats

Dare I say my picky eater of late is making a turn around? I don't want to jinx it, so that's all I'm going to say! Yesterday was a tough day around here. Miss A woke up several times throughout the night and I couldn't for the life of me figure out why. She's not sick, not teething from what I can tell, but she was pretty upset every time she woke up. Is it too early for nightmares? I just don't know. She was awake for the day at 5:45am.

So, our schedule was completely thrown off. We had two breakfasts. Lots of snacks in between meals. And we stayed home because thankfully, she was tired, and took more naps than she usually does.


Breakfast: 7:00am

Not pictured. Too groggy and blurry-eyed to function. And it wasn't that appetizing anyway!

I ate: a bowl of cereal

Miss A: toast

Second Breakfast: 9:00 am

What does one do when they're up so early? I bake. Sleep deprivation makes me want to eat all the things.

I ate: a banana bread muffin with strawberries

Miss A: the same, devouring her muffin and eating all her strawberries (!!)


Lunch: 12:00pm

I ate: a turkey wrap with roasted red pepper spread, tomatoes, and cheese

Miss A: a turkey wrap with cheddar cheese


Snack: 3:00pm

I ate: homemade mozzarella sticks. Not the healthiest snack, I know. But as I said, sleep deprivation makes me want to EAT. Unhealthy things apparently. :( I also had more COFFEE. And some cookies, I'm sure.

Miss A: she ventured to the pantry a couple times before this, snacking on granola bars and crackers. Then she sat down and ate some watermelon and banana. 


Dinner: 6:30pm

I ate: sloppy joes with sweet potato wedges

Miss A: the same, except she ate the meat mixture, with no peppers or onions. I was surprised she liked it! It was a huge mess afterwards. ;)


In case you're wondering, Miss A did sleep through the night last night. Yay! I'll be a much happier mama today. Enjoy hump day!

What We Ate Wednesday

I'm loving linking up every week for What I Ate Wednesday. It always amazes me how much of my day revolves around food every time I snap a picture of what we're eating. Since my pictures were just terrible last week I whipped out the real camera so that you would actually find our meals appealing! I hope these posts give you inspiration on what to eat for breakfast, lunch, or dinner, along with some new ideas for your kids. Miss A has had quite the appetite lately and I'm loving it!


Breakfast: 8:30 am

I ate: my favorite- whole wheat toast with peanut butter, bananas, honey, and granola

Miss A: toast with applesauce and banana slices



Snack: 11:00 am

We've gotten into the habit of having a snack right before nap time. Miss A will walk over to the pantry when she's ready, grab a yogurt, and wait by her high chair.

I ate: pumpkin pie yogurt with granola and chocolate chips

Miss A: two banana cookies with yogurt




This is what happens when I allow her to "feed" herself. She's insisting on being more and more independent while she eats, but of course, she hasn't gotten the hand of holding a spoon and feeding herself that well. She can manage fairly well and there are plenty of bites that make it in- but...this is what happens sometimes. Yogurt gets EVERYWHERE. And banana cookies make great dippers!


 Lunch: 12:30pm 

I ate: leftover white bean chicken chili that I made the night before with cheddar cheese and crushed tortilla chips. So good!

Miss A: ham and cheese wrap with tomato slices, which, she didn't eat, but she LOVED them a few days ago.You never know with this girl. 



Afternoon snack was on the go. We attempted to tackle some Christmas shopping but failed miserably. Why are men so hard to shop for? She ate some Mum Mum's, a granola bar, and cheerios. 

Dinner: 6:00pm

Dinner was early since I was starving and didn't take a handy dandy snack cup for me!

I ate: slow cooker ranch chicken over brown rice and roasted carrots, which I'll be adding to our dinner rotation, it was that good!

Miss A: the same, which she devoured and begged for more! I love when she's a good eater.

What We Ate Wednesday + Giveaway!

It's time for another What We Ate Wednesday! I'm trying to eat more fruits and veggies and I'm doing my best to incorporate them into very meal. I apologize for the mediocre photos this time, I don't know what was up with the lighting in my kitchen yesterday.

Breakfast: 8:30 am

I ate: a slice of whole wheat toast with PB and bananas. I wasn't feeling breakfast and didn't want to eat much so I only had one slice. Sorry about the two bites..almost forgot to take a picture!

Miss A: toast, without peanut butter, and banana, a recent favorite fruit!



Lunch: 12:30 pm

By the time lunch rolled around I was pretty hungry! I did have coffee and a cookie before, while attempting to get Miss A to nap. She skipped her morning nap all together and didn't take a nap until late in the afternoon.

I ate: a whole wheat wrap with turkey, sliced apples, and brie. So good! Along with chopped tomatoes, orange pepper slices, and cucumbers. 

Miss A: a whole wheat wrap with ham and cheddar cheese




Snack: 2:30 pm

I ate: sweet potato chip, trail mix, and some chocolate 

Miss A: a few crackers and her traditional favorite, watermelon

Dinner: 7:00 pm 

I ate: a variation of baked ziti with lean ground beef, orange peppers, tomatoes, topped with feta and mozzarella cheese

Miss A: the same, without the veggies. She's not a fan of tomatoes or peppers.

What We Ate Wednesday




Breakfast 8:45 am

We ate breakfast later than usual. Miss A woke up at 7:00 am, decided she wasn't ready to be up for the day, and went back to sleep until 8:30! Mama was happy.

I ate: pumpkin oatmeal with walnuts. I've shared this on Instagram before and some of you asked me how I make it. It's nothing special- I use old fashioned oats and cook them as directed on the container and add a big scoopful of pumpkin, sprinkle nutmeg, cinnamon, and salt, and then add a tablespoon of brown sugar. I like to add a little bit more brown sugar on top and serve with chopped walnuts. 

Miss A: She also had the oatmeal, she LOVES it!


Yeah, she wants to feed herself nowadays!

Morning Snack: I had a cup of coffee and a cookie, Miss A slept right through snack time and woke up late for lunch! Talk about a long nap. 

Lunch: 12:45 pm 

I ate: An omelette with chopped red peppers, black beans, tomatoes, and cheddar cheese. Topped with sour cream and salsa.

Miss A: gnocchi with butternut squash, our leftovers from the night before


She also likes "wiping" her mouth with a napkin when she's done. 

Afternoon Snack: 4:30 pm

We ran errands after lunch and got home late for snack. She had some teddy grahams while we were out to hold her over.

I ate: an apple with peanut butter

Miss A: watermelon and crackers




Dinner: 7:00 pm

I ate: Spanish chicken with red potatoes, onions, and carrots. I usually make it with sausage or chorizo, like you see in this picture, but I didn't have any on hand.

Miss A: Spanish chicken with a few of the potatoes and carrots



After dinner I may have had a butterfinger or two...having Halloween candy in the house is too tempting!

What We Ate Wednesday


Breakfast: 8:30 am

I ate: pumpkin spice frozen waffles with strawberries and granola with a glass of OJ

Miss A: pumpkin pancake with strawberries (!!) 

If you remember, Miss A hates fruit, or at least, she used to. Last week when her grandmother was here, she ate a couple of strawberries off her plate. I thought it was a fluke! Luckily I was wrong and she's continued to eat them! Happy mama here. 



Lunch: 1:00 pm

I ate: a whole wheat turkey wrap with Swiss cheese, dried cranberries, almonds, lettuce, and a drizzle of balsamic vinegar 

Miss A: a turkey wrap with cheddar cheese, and slices of banana (another new favorite food!)



I know this has nothing to do with food, but I have to share these pictures with you. After lunch we put on our shoes and headed out to the trail behind our house. Miss A is in love with the outdoors lately and loves to explore and take in her surroundings. The leaves crunching beneath her feet and the tall trees were amazing to her.


This picture. I want to frame it and capture this moment forever. I'll always be behind you, baby.


Snack: 3:00pm

I ate: pumpkin seeds! I'm obsessed. I also had some granola bites I got from Costco last week. So good!

Miss A: watermelon and a two cookies




Dinner: 6:30pm 

I ate: shrimp enchiladas with brown rice and corn. Delicious! You can find the recipe in my menu plan.

Miss A: chicken with brown rice and corn. I figured the enchiladas would be too spicy for her and made her something different to eat


I'm SO happy with the recent changes in Miss A's eating habits. Fruits and vegetables are suddenly no longer an issue! She is eating up everything I put in front of her. Hopefully this isn't just a phase and she continues to be an incredible eater.

What We Ate Wednesday- Weekend Edition

Happy Wednesday! It's time for another round of What We Ate Wednesday, except this week I'm doing something different. Instead of sharing with you what Miss A and I ate throughout the course of one day, I thought it'd be fun to share what we ate over the weekend.

 

We had family in town and whenever we get together we like to go out and EAT! Seeing as we've only been in the area for four months, there are still plenty of new restaurants to try. We kicked off the weekend with a trip to Starbucks, where everyone got pumpkin spice lattes and I got a slice of pumpkin cheesecake. Oh my God, was it delicious. I was greedy and didn't want to share because it was that good, but of course, I couldn't deny Miss A and her rapidly developing sweet tooth. Like mother, like daughter. Oy.   


Friday night we checked out a local sushi place. My husband and sister-in-law's shared a plate full of three different rolls. This one pictured was my favorite. I forget what was in it, but it was called the New Yorker.


I ordered agave lime salmon with coconut ginger sauce. Hands down the best salmon I've ever had. The sauce on it's own was to die for! 

As for Miss A, she had her own bowl of white rice with lots of veggies and she ate it happily on my lap.


We ate breakfast at home every day, but for lunch on Saturday we went to a small cafe that has the best cakes and pastries, but they also have amazing sandwiches. This sandwich is called the Brie, Turkey, and Apple Panini. All of us ordered the exact same sandwich because it just looked so good!

Miss A had lunch before we left the house, but of course, that didn't stop her from sampling my bread and turkey. 


For brunch on Sunday we went to this amazing breakfast place. It's only open for breakfast and the reviews on Yelp were amazing so we had high expectations. Everyone was pleasantly surprised. My father-in-law said it was the best breakfast he'd ever had. Brie and sauteed apples were an appetizer. A sweet potato pancake was shared between my sister-in-laws, and my mother-in-law had this huge bowl of blueberry quinoa with homemade granola. I wish I had a picture of that to share with you (I've never even heard of blueberry quinoa!) but this is what I ordered: an omelette stuffed with asparagus, roasted red peppers, and goat cheese. 


Miss A had a turkey wrap with- can you believe it- strawberries!! My jaw literally dropped open when my mother-in-law offered her a strawberry slice and she actually ate it! I wonder if she'll do the same for me, or is it special because grandma gave it to her?
