The Greatest Pancakes I Have Ever Made

I have a horrible history with pancakes. Before I started attempting to make them from scratch, I used a boxed mix. They used to come out okay, but I knew they could be better. I went on a massive search to find the perfect pancake recipe.

Epic fail!

I burned my pancakes, dealt with pancakes that refused to cook thoroughly and were gooey, pancakes that stuck to my frying pan like glue, and pancakes that tasted terrible, flavorless or plain weird. I was a pancake failure. My pancakes sucked. Poor husband who had to eat them all.

That is, until I found this recipe.


I don't think he'll have a problem eating them now. These are the BEST pancakes I have ever made!!! (And yes, he wholeheartedly agrees!)

All because I was craving breakfast for dinner on Wednesday night. I scoured the interwebs again, searching, and found this one pretty quickly. It was fate.

I had mine plain but sprinkled chocolate chips on the ones for the hubbs. When we sat down to eat and I had a bite of his, I instantly regretted my decision. Perhaps I should say these were the best chocolate chip pancakes I have ever made. Score!!

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

In a bowl, mix together the flour, baking powder, salt, and sugar. In another milk, whisk the milk, egg, and melted butter. Mix the wet and dry ingredients together and whisk until smooth. Warm a greased griddle or frying pan over medium heat. Pour the batter on the griddle and brown on both sides.

I hope this wasn't just a fluke. Thank you to the gods at How To: Simplify. Without you I would still be making disastrous pancakes!
