Menu Plan Monday


This week I stuck to my menu plan pretty well! The only one I had to omit was the Chicken Cordon Blu as I forgot to buy some ham. :( Oh well. The hubby and I also made Pumpkin White Chocolate Cookies and Banana Oatmeal Chocolate Chip Cookies for some friends we had over earlier in the week. I made the pumpkin cookies last fall and we LOVED them. They are going to be a fall staple in our household!

My menu plan for this week has some repeats, either because I haven't gotten around to making them or because we (I) loved them so much the first time around. I made the White Chicken Chili last night and it's to die for.

Menu Plan for this week in no particular order.

  • Baked Ziti with Italian Sausage
  • Breaded Chicken Cordon Blue with Steamed Brown Rice and Broccoli
  • Penne Chicken & Tomato Bake
  • Roasted Pork Tenderloin with Potatoes
  • Chicken Parmesan with Side Salad
  • Cheeseburgers with Lettuce & Tomato, Greek Salad

I'm thinking ahead! Possible ideas for Next Week.

Menu Plan Monday

Yes, I know I am a day early! Last week I completely forgot to menu plan. It was my first full week of a new job and I was swamped with work. I came home every night having no idea what to cook! I wasn't able to go grocery shopping until later in the week, forcing me to deal with what I had in the fridge. :/ This is not going to happen this week!

I've went ahead of myself and started jotting down ideas on Friday. The hubbs and I are trying to eat healthier! My hubby just finished his cardiologist sequence where he learned A LOT about healthy eating. His professors continuously stressed eating a Mediterranean diet; fruits, vegetables, fish, poultry, nuts, and whole grains. Hence the salmon recipe listed here today. When I was finally able to go to the store last week I bought carrots, grapes, strawberries, lettuce, and corn. Today we will be making a second trip to pick up some more ingredients for our new recipes, as well as a bottle of red wine and green tea leaves (very important aspect of the Mediterranean diet, having a glass of red wine with dinner every night).

I am also going to try to implement salmon into our weekly menu. Red meat will be taking a back seat, as it is not recommended to eat very often. I have NEVER made salmon, I'm a little nervous! I have no idea how to make it! I did some searching through my cooking magazines and blogs online. I found an awesome recipe on allrecipes.com, Alaska Salmon Bake. It sounds delicious and has great reviews. I'll let you know how it goes. :)
